Cucumber Noodle Salad (Liang Mian)

  • 4-5 cucumbers or Chinese wheat noodles
  • 2 Tbs sesame oil
  • 3 Tbs soy sauce
  • 2 Tbs black viengar
  • 1/4 cup peanut butter or sesame paste
  • 1 Tbs maple syrup
  • 1 Tbs ginger, minced
  • 1 Tbs garlic, minced
  • 2 tsp chili sauce optional for sauce
  • 3 tsp white sesame seeds optional topping
  • shredded cucumber optional for topping
  • shredded carrot optional for topping


  • Boil the noodles according to package directions.
  • Mix all ingredients from sesame oil through garlic together well, adding the chili sauce if you'd like it spicy.
  • When the noodles are ready, drain them. Add the sauce to the noodles or zoodles and mix well. Serve with shredded carrots, cucumbers and white sesames sprinkled on top. Enjoy!
