10 Simple Salad Ideas for Dinner
Coming up with simple salad ideas for dinner or even lunches can be challenging at times. Making sure they are plant-based can add another layer of difficulty. I do come across a lot of interesting salad recipes, but often they have some sort of egg or cheese on them, or the dressing isn’t plant-based. While I’m pretty good at making creative salads on the fly, we wanted a place to gather ideas that we could access easily on the go.
Below is a list of 10 salad recipes from very talented recipe creators we adore. Their recipes are never over-complicated, but they pack a lot of flavor. If you like these, you should definitely give their other recipes a spin. Don’t forget, you follow these recipes to a T, or start small and bring elements of them into simpler salads. We like to build on what I know so I don’t get overwhelmed.
We hope this list will inspire your salad rolodex and keep your menu fresh this summer!

Buffalo Tofu Salad by From My Bowl
Recipe Notes: The star of this salad is the buffalo tofu! She uses a very straightforward batter that’s quick to put together. We’ve put this tofu on salads, and in wraps. The creamy ranch dressing is also very quick so we recommend using this on your salad or wrap.
Orzo Salad by Raw Til Whenever
Recipe Notes: The only recipe in this bunch with pasta in it, it’s a good reminder that we need to make sure we add pasta to more salads!
Grilled Corn Zucchini Salad by Minimalist Baker
Recipe Notes: If you haven’t tried crispy chickpeas, you will love them. This recipe has a few more steps than the others, but we like that she keeps some as optional.
