Spiced legumes are one of our favorite ways to make quick, tasty dishes. You can dress up beans and lentils in so many ways, just like you might flavor chicken or other meat proteins. Except that legumes provide fiber, nutrients, lower calories and keep you full for a long time. Bonus.
This dish is in no way meant to be close to authentic Tikka Masala. It is a quick and easy weeknight dinner and is supposed to help you think about different ways you can use simple spices and sauces to make bean dishes. This dish is based on a store-bought Tikka Masala spice mix we bought. (Which we just noticed uses honey powder, so it’s not vegan). But there are other blends out there! We like that this spice blend included tomato powder so we didn’t even have to cook tomatoes which is normally a big part of traditional Tikka Masala.
Pre-made spice mixes are a great way to speed things up in the kitchen. But, you don’t have to buy this spice blend or any other store bought Tikka Masala spice/ sauce blend. You can make your own with a little research. I’ve listed a spice recipe to below as a start. Just add tomato paste to the spice mix if you don’t have tomato powder. We like tomato powder powder because you can mix it with water to make a quick tomato paste instead of buying jars of tomato paste.
Optional Homemade Spice Blend:
- Mix the following together: 3 tsp tomato paste, 2 tsp sweet Spanish paprika,1/2 tsp cumin, 1/2 tsp garlic powder, 1/2 tsp cinnamon, 1/2 tsp turmeric powder, 1/2 tsp chili powder, 1/2 tsp brown sugar, 1/4 tsp salt, 1/4 tsp ground ginger powder, 1/8 tsp cardamom powder.
