How to Cook Collard Greens

Step 1. Rinse collard green leaves in a colander, and then either cut the leaves off with a knife, or pull off of stems using your hands.
- I have been using a fun little gadget I found at Target, called a Chef’n, to strip the leaves which works as well and is inexpensive.
Step 2. For ease of cutting the leaves into smaller pieces for cooking, you can either tear them apart, or place the leaves on top of each other. Then, roll them up and slice them with a knife.
Step 4. Now, you can either steam or saute the greens in a pan. I prefer sauteing lightly with a little oil or veggie broth, and garlic. This way you lock in more nutrients, and don’t lose a lot of it to the water when steaming.
Step 5. We often add our cooked tofu to the cooked greens for a nutritious, filling and delicious light lunch or snack!
