You can whip up this dressing in a few minutes with a food processor or blender. Sometimes I soak my cashews, sometimes I don’t. It all depends on how much time I have. If you want a very smooth dressing, think about soaking them.
This pairs great with veggies and crackers, or as a salad dressing!
Vegan Cashew Dill Dressing
- 1 cup cashews ground
- 1.5 Tbsp lemon juice
- 1.5 Tbsp nutritional yeast
- 1 tsp garlic powder
- 1 tsp onion powder
- 2 tsp Dried Dill
- 1/8 tsp salt
- 1/2 cup water or more to make thinner
- If you haven't soaked your cashews, grind them in the food processor until almost a powder. Add the rest of the ingredients and process or blend well until the consistency you like. Add more water to make it a thinner dressing, rather than a dip!
